Almond Or Walnut Butter

Ingredients:

Roasted Almonds or Walnuts
Salute Sante Grapeseed Oil
Flax Seed Oil (optional)
Frontier Vanilla (optional)
Agave Nectar (optional)

1. Roast nuts in over at 150 degrees for 1 hour or so.
2. Grind the roasted nuts in Vita Mix blender.
3. Put in a dish and slowly add Grapeseed Oil until you reach the desired spreading consistency. For added food value, add a small amount of Flax Seed Oil. If you want more of a candy spread, add a few drops of Frontier Vanilla ( this product is not diluted and is more intense in flavor) and ¼ tsp. of Agave or more to taste.

Vegan Sweet & Sour Cream

Ingredients:
1 Can Organic Premium Thai Kitchen Coconut Milk
6 Tbsp. Fresh Meyers Lemon Juice
2 Tbsp. Agave Nectar
4 tsp. Rice Vinegar, smooth, mild, reduced with water to 4.2% acid
2 Tbsp. Cold-Milled Flaxseed

1. The Organic Premium Coconut Milk will be very thick cream that you will have to spoon out of the can (if it has been placed in the refrigerator). Place the coconut cream into the Vita Mix Blender with the other ingredients. Blend on high for at least 30 seconds.

2. Pour into dish, cover and refrigerate. As soon as it is cold it will thicken like sour cream.

Important:
Do not mix by hand. We tried to mix it by hand. The difference was that you could taste the coconut flavor. When we put it into the Vita Mix there was no coconut flavor to it.

Apple Date Dressing

INGREDIENTS:
1 Cup Salute Sante Grapeseed Oil
3 Cups Peeled & Diced Apples (Golden Delicious is what I used)
3 Large Pitted Dates
1 Large Lemon, juiced
½ tsp. Pumpkin Pie Spice
Put all ingredients into Vita Mix blender and blend on high until smooth and creamy. Wonderful on steamed vegetables such as pumpkin, butternut squash, zucchini, etc.

Recomended:
-Wonderful on steamed vegetables such as pumpkin, butternut squash, zucchini, etc.
-This is just as good over desserts such as bread pudding, apple pie, etc.

Apple Fantasia Dressing

INGREDIENTS:
1 Cup Salute Sante Grapeseed Oil Plain
2 Apples (2 Cups), peeled and chopped
1 Lemon, juiced
1 Tbsp. Agave Nectar
NOTE: I usually add 1 Tbsp. sweetener for each lemon juiced. If using very sweet apples, you may not need the sweetener or you may need to add juice of another lemon. Depends on your taste.

Blend all ingredients in Vita Mix blender taking it to liquify until smooth and creamy, or on high with other mixers.

VARIATIONS:
1. You can add some fresh chopped dill just before serving.
2. You can add 1/4 tsp. caraway seed when blending.
3. You can add about ½ inch piece of peeled ginger when blending. Also, add 3 cups of apples to this instead of 2 cups.
4. You can add 1 cup of steamed watercress when blending.

Carrot Lemon Ginger Dressing

INGREDIENTS:
3 Medium Size Carrots
1 Cup Plain Salute Sante Grapeseed Oil
1 Lemon, juiced
1 Tbsp. Agave Nectar, optional
½ inch Piece Ginger, peeled
Salt, optional
Put all ingredients into Vita Mix blender. Start with slow speed then take it up to high. This should be nice and creamy.

Carrot Lemon/Lime Dill Dressing

INGREDIENTS:
3 Medium Carrots, cut into chunks
2 Whole Stalks Celery
½ Lemon, juiced
½ Lime, juiced
3 to 4 inch Piece Fresh Dill
1 Cup Salute Sante Grapeseed Oil
1 Tbsp. Agave Nectar or Honey

Put all ingredients into Vita Mix blender, wet blade container and blend on high speed until smooth and creamy. This dressing is great on salads or over meat to spark up the flavor.

Options:
For a more intense flavor of dill you could add ¼ tsp of dried dill seed.To make a dip for vegetables, use only ½ cup of Grapeseed Oil.
